Fire and gin at the fort

Portsmouth Distillery’s 1st Birthday

We have used some of the fantastic gin and rum the guys down at Portsmouth distillery have been producing in some of our cooking for our supper clubs.

So, when we got the call that they wanted us to provide the catering to celebrate their first birthday we were over the moon.

Of course, we would be breaking out the fire pit and cooking some amazing meat from the guys over at Farmers Choice, but we wanted to get some of that lovely cinnabar rum into the mix.

So, after rummaging through old recipes and some experimentation in the kitchen we came up with Portsmouth Distillery cinnabar rum and plum ketchup.

On the day of the event, armed with our lovely ketchup creation and amazing legs of South Downs lamb we loaded the van and headed down to the fort.

After a long cook over the fire pit and putting up with lots of rain and high coastal winds we were serving up lamb tacos with Isle of Wight tomato salsa and plum and rum ketchup… it was amazing.
