What we will cover on a typical day

  • Going over the equipment we will be using and how to transfer the skills you will pick up to the equipment you have at home

  • the types of fuel to use and what effect they have on the food we will be cooking

  • Ways of lighting fires, how to manage them and how to control temperature

  • Direct and indirect cooking, cooking directly on the coals and cooking dirty

  • The use of small equipment to make your fire cook a success every time

  • What cuts of meat, fish and vegetables work best over fire

What will we be cooking and more importantly what will we be eating?

We will get you working straight away to cook yourself a tasty fire cooked breakfast to fuel you for a busy day of live fire cooking. Along the way we will be cooking up some tasty morsels of meat and shellfish. Then preparing and cooking sauces and vegetables and of course meat and fish for the fire feast all cooked by you at the end of the day where you can sit down with your fellow fire cooks and enjoy the fruits of your labour.

Where will the courses be held, what should I wear and what do I need to bring?

Our classes will take place at Portsmouth Distillery set in the grounds of the historic Fort Cumberland surrounded by big stone fortifications. The site offers easy access from the motorway and has ample parking.

As this is an outdoor class come dressed according to the weather. Classes will still go ahead in inclement weather so you may get wet during the day.

The only thing you need to bring is a pen for taking notes and an appetite.
